Kim loves to bake. And she’s really good at it. Her cupcakes are to die for. Piled high with icing, moist cake. Yum. I’m hungry just writing about it. So for each staff member’s birthday at the nursery, they get to pick the flavor they’d like to have. At first it started with simple chocolate or vanilla, but then I thought that Kim could use a challenge, so I started encouraging the staff to be creative with their flavors.

So far, the list of the cupcakes Kim has made include chocolate espresso, orange-chocolate, macadamia-coconut, carrot cake (with cream cheese and with vanilla icing), S’mores, strawberry cheesecake, banana cream pie, key lime pie, red velvet, chocolate with chocolate truffle, and I’m sure I’m forgetting some.

Now my birthday is coming up, and I’m trying to think of a real challenge for her. I’m between pistachio-cardamom and candied ginger. But maybe I’ll take a trip on Pinterest to see if I can find the most challenging cupcake in the world! What’s your favorite cupcake flavor?
